Behind Ditchay's Bistro

The idea of this Bistro all started on a once secluded island in San Vicente, Northern Palawan. Many years ago, cooking up a storm using only available ingredients, this meant using what we could grow on the island and what we remembered to bring from town. Of course the fish was extremely fresh and abundant, in those days we could pick and choose the fish we wanted, huge prawns, crabs and pitik were delivered to the house on a regular basis. Although this is no longer the case, we still try to cook our gourmet meals, travelling through our palates.

After 20 years of just passing through Puerto Princesa, we decided to follow through with the idea of a little bistro so we could have a "pied à terre" in the city instead of staying in a hotel and making the rounds of the restaurants in town. We just wanted a small homey place where we could serve good home cooked meals with a twist. The main ruling tenet was to have a place that would have as small a carbon footprint as we could possibly manage. This meant no air-conditioning, using as much locally sourced ingredients as possible, and when available organically produced meats, vegetables and fruits. Our main import is of course the wine. Alas, there is nothing we can do to change this at the moment.

 

Ditchay's Bistro tries to keep a small menu that changes every so often. We do not have pretensions of being chefs but we do love to cook, to eat well and to share with people as we travel with our palates. We do not use additives like mono sodium glutamate nor do we use bouillon cubes or other pre-processed sauces. All our stock is made from scratch, desserts and pastries made in-house with as much love and care as we can muster. If our prices seem steep to some, (or very moderate to others) it is only because we try not to make any short cuts, produce is bought fresh on a regular basis and we try to give generous portions.
This is not "nouvelle cuisine" nor is it pretty fusion plates.
This is just Ditchay's, with an Asian touch to France and a French touch to Asia.

Each dish is a juxtaposition of flavours you would not expect with the added piquancy of a short story behind the name regaled at the dinner table (if you are curious enough) by Sommelier (and husband) of Ditchay,...

..... Ditchay's is more than just a bistro and is certainly an escapade as well as convergence point for those who suffer from urban alienation and are in search of intimacy, ambience and good music or like Wong Kar Wai's film -- 'In the Mood for Love'."
